I am cooking a huge Christmas dinner, but need some ideas for some Kid friendly, quick and easy breakfast ideas. Any help would be appreciated! |

Crock Pot Morning Casserole
1 bag (32 oz.) frozen hash brown potatoes
1 lb. of bacon diced, cooked and drained* or 1 lb. cooked ham, cubed
1 medium diced onion
1 green bell pepper diced
3 C. shredded cheddar or Monterey Jack cheese
1 dozen eggs
1 C. milk
1 t. salt
1 t. pepper (more or less to taste)
Place a layer of frozen potatoes on the bottom of the slow cooker, followed by a layer of bacon then onions, green pepper and cheese. Repeat the layering process two or three more times, ending with a layer of cheese.
Beat the eggs, milk and salt and pepper together. Pour over the Crockpot mixture, cover and turn on low. Cook for 10-12 hours.
*I use the real bacon bits that come in the glass jar |

Overnight French Toast
For the french toast:
- 1/4 cup (1/2 stick) butter, room temperature
- 12 3/4-inch-thick French bread slices
- 6 eggs
- 1 1/2 cups milk
- 1/4 cup sugar
- 2 tablespoons maple syrup
- 1 teaspoon vanilla
- 1/2 teaspoon salt
For the maple syrup:
- 2 cups maple syrup
- 1 cup chopped walnuts, toasted
To make the french toast:
Spread butter over bottom of heavy large baking pan with 1-inch-high sides. Arrange bread slices in pan. Beat eggs, milk, sugar, syrup, vanilla and salt to blend in large bowl. Pour mixture over bread. Turn bread slices to coat. Cover with plastic and refrigerate overnight.
Preheat oven to 400°F. Bake French bread 10 minutes. Turn bread over and continue baking until just golden, about 4 minutes longer. Transfer cooked toast to plates and sprinkle with powdered sugar. Serve immediately, passing Maple-Walnut Syrup separately.
To prepare maple syrup:
Combine syrup and walnuts in heavy medium saucepan. Bring to simmer. Serve syrup hot. Makes about 3 cups. |

I took it to a breakfast at work and every bit of it was eaten. It was very good. I am going to make it for Christmas morning. You can serve with biscuts and fruit. |

Monkey Bread Buy frozen bread dough, thaw, pinch off quarter sized pieces, roll into a ball, dip in butter and then roll in a sugar/cinnamon mixture (don't press down). Place the balls in an oiled bundt pan, let rise, and then bake 350. Invert onto a plate and then pull off pieces to eat - fun!. The butter and sugar/cinnamon will create a sticky glaze. You can assemble Christmas Eve and let rise overnight and pop in the oven in morning. |

| Thank you all so much!!!!!!!! I think that I have finally decided to go with the French Toast Casserole and sausage balls this year. (although, I really don't think that the sausage balls are gonna make it until morning!! LOL!! ) |

It's SOOOO easy!!!!!!!!!!! 2 cups bisquick mix, 1lb fresh ground sausage, 10oz shredded cheese (I use sharp or mild cheddar..but whatever you choose is fine) Roll into balls just a little smaller than golf balls. Pop in the oven at 350* for 25-30mins. and VOILA...sausage balls.
****WARNING******** these balls very RARELY make it to the next day, so you may need to make two batches...on for tonight and one "secret" batch for the next day!!  |

Wow! This all sounds SO good! I usually just whimp out and do quiche. It's so easy - pre-made pie shell, chop up and put in whatever is in the fridge (veggies, b-fast meats, etc), fill with scrambled eggs, top with cheese and bake. You can make it Quiche Lorraine by basically just adding some chopped cooked bacon bits. Sounds fancy, but it's really nothing. Man, I think I need to get more creative here! :-)
